Twenty-six years ago, I married into a big Italian family. After all these years, my husband's face still lights up when I mention making meatballs for dinner. They're usually served on top of pasta, but... As a diabetic, I serve mine on spiralized zucchini. My Italian husband even likes them this way, too. I also enjoy them on spaghetti squash, too. Honestly, I've only found one brand of frozen meatballs I like. My freezer usually has a few bags to use in a pinch. They are a lot easier than making your own. However, I do experience a sense of pride when serving homemade meatballs right out of the oven. So, today, in honor of "National Meatball Day" here's the recipe I use.
