Why I Love This Recipe:
Ingredients:1 5 oz. can of tuna rinsed and drained well 3 - 4 Tablespoon mayonnaise 1 English muffin 4 Tablespoons grated cheese (I use a blend of cheddar and Monterrey Jack) ¼ tsp. garlic powder 1/4 tsp. onion powder Salt and pepper to taste A pinch or two of Old Bay Seasoning (optional) Directions:Preheat oven to 350 degrees.
Mix tuna with mayonnaise, garlic powder, onion powder, salt, pepper and old bay. You can use any spices you wish—like cilantro, parsley, cumin, onion powder. If you like things spicy, add some cayenne pepper. Split English muffin and toast it. (Toasting will add crispness to the sandwich.) Place muffins on a baking sheet lined with parchment paper—split side up. Divide the tuna mixture into two servings and spread over the English muffin halves. Top with shredded cheese. Line a baking sheet with parchment paper bake for 10 -12 minutes-until the cheese starts to melt and turn golden. ***Suggested toppings: green onions, tomatoes, olive slices, red onions. The possibilities are endless.
